Kapuśniak - Sauerkraut Soup
Traditional Polish sauerkraut soup with meat. Tangy flavor from fermented cabbage, rich and hearty. Popular throughout Poland's history.

Ingredients
- 500 g Sauerkraut
- 400 g Pork ribs
- 4 medium Potatoes
- 20 g Dried mushrooms
- 1 medium Onion
- 2 tbsp Tomato paste
Instructions
Cook ribs in 2L water 40 min.
Add rinsed sauerkraut, mushrooms, simmer 30 min.
Add diced potatoes, cook 15 min.
Make roux with onion and tomato paste, add to soup.
Season and serve.
💡 Tips & Variations
Rinse sauerkraut if too sour. Add sour cream when serving for extra richness.
